Peter de Castro, Jr.
most recently served as operating partner of Keefer’s,
a successful steakhouse that received several “Best New
Restaurants of 2002” awards from major publications including
Esquire Magazine and Chicago Magazine. He partnered with Glenn
and Rich Keefer and Jimmy de Castro to build this into a thriving, “A” list
steakhouse that has achieved ongoing success and recognition
in one of the most competitive restaurant markets in the United
States.
Prior to his relationship with Keefer’s, Peter launched
Bainbridges Restaurant, a casual fine dining establishment in
Chelmsford, MA., to capitalize on the development boom in this
northeast region. Peter and his wife, June, wrote the business
plan and designed the basic Bainbridges brand concept for Stoney
Brook Ventures, Inc., where Peter served as Director of Operations.
He handled all aspects from design and development, menu engineering,
concept evolution and finance. Bainbridges sustained several
years of success and increased investor returns while being voted
#1 restaurant concept by the Community Newspaper Group.
A true journeyman in the restaurant business, Peter served very
successful national chain brands following his studies at the
University of Kentucky, where he majored in business administration
and marketing. At T.G.I. Fridays he served as corporate trainer
and would later incorporate management direction for new restaurant
openings including the new Virginia Beach franchise. At Bennigan’s
Restaurant Corporation, he received his first General Manager
assignment for the Bloomfield Hills, MI restaurant at the young
age of 25.
For most of his life Peter has had a continuous connection to
the restaurant industry rooted in front line service delivery.
His passionate, hands-on approach to operating restaurants have
won a large and committed following through creative, award winning
food and service excellence. He will now parlay his passion and
experience into enduring success at Tavern at the Park.
